Easy Vegan Healthy Eating on the Go!

As the seasons change from summer to fall you will likely be ready for something a little heavier than just salads. As promised, I have today the recipe for veggie patties. These are a result of going off gluten over a year ago ‘just to see what would happen’. Wow! Yes, another shock. The second day of no gluten, I took a deep breath, and I felt like I had new lungs!** Again, I was hooked!

I had loved bread all my life, especially homemade. But breads can be very fattening, even good ones, and I like them too much, so when my vegan friend told me about these, I couldn’t wait to try them. I loved them! They are a nice addition because they’re filling, and they have fewer calories than bread too.

So, I hope you enjoy this month’s easy and nutritious meal, and don’t be afraid to experiment with the patties, as they work with different vegetables, grains, and spices. Get creative! Your taste buds will thank you. Enjoy!

Veggie Patties

  • 2 cups raw zucchini cut into chunks
  • 1 cup cooked rice or other grains
  • 1 cup of flour or oatmeal****
  • Salt to taste
  • Garlic 2 cloves chopped

Chop garlic and zucchini in food processor until very small pieces.

Add to rice, flour, salt and stir. Adjust if you want them to be thicker. They will cook no matter how thin, but only take a few minutes on each side on low – medium heat.

****flour can be any flour, if you need gluten free, grind in your blender or coffee grinder (in small amounts) any gluten free grains such as: amaranth, buckwheat, millet, oats, quinoa, or rice,( less expensive than buying it)

My 15 year food journey has caused my taste buds to come alive and to anticipate new foods. I have lost weight, corrected health issues, (more in a later article), and I’ve learned how important diet really is. Reading everything I could get my hands on truly opened my eyes to the evils of the food industry and how it is making us overweight and sick. I am in my 50’s and I am healthy, I take no medication, and I look more than 10 years younger than I am (so everyone says). The healthier we are now, the healthier we’ll be in our later years. 

I got to where I am one step at a time. I gave up: sea food, meat, fowl, fish, then eggs and dairy, all the while cutting out most processed foods, and eliminating pop. Then I went mostly raw, learned about juicing and smoothies, cut out most sugars, and I am now gluten free.

What’s left you ask? Mmmm….. I saved the best for last: lots and lots of vegetables with sides of legumes and grains, nuts and seeds, and fruit. I never go hungry.

1 Corinthians 10:12: Everything is permissible, but not everything is beneficial.

    Great to see your picture! I found out what foods I am allergic to and now my joints don’t ache as much – and I do feel much younger than my age. I have energy, stamina, no medicines (except herbal) and feel great.
