Peanut Butter Balls

1 cup dry oatmeal

2/3 cup shredded unsweetened coconut

½ cup peanut butter

½ cup ground flaxseed

½ cup chocolate chips

1/3 cup honey

1 tbsp chia seeds

1 tsp vanilla



Mix all ingredients together and form into bite size balls. Chill for 2 hours.



  • High in fiber
  • Low in processed sugar

“It was all I could do to not gobble them all up at once! But they are quite filling so I really didn’t need to. I enjoyed two balls every day in the afternoon at work and they staved my appetite until I got home for supper.”
