Cold or Hot?

March’s recipe, like a thermos, can be ‘Cold or Hot’

I thought of this idea while deciding what to make for lunch and for this article. I knew the ingredients I wanted, I knew I wanted a one dish meal, and I knew I wanted enough left over for one or two more meals. So here’s how it happened…

As I looked at the ingredients lined up on the counter I realized every one of them could be eaten raw or cooked, cold or hot. Hmmmm…tempting. Having it raw and cold would be much quicker, but then I remembered the minus 15 degree temperature outside, and cooked and hot sounded like a better idea.

So here you have my 3-in-1 dish. You can have it cold or hot, raw or cooked, and its great both ways, and at any time of the year. ENJOY!

Chickpea & Veggie Salad or Entre

Clean and cut into bite size pieces:

1 large carrot
1 small onion
1 large red pepper
1 stalk celery
1 bunch of broccoli

HOT
Steam: carrot, onion and celery until almost cooked. Then add pepper and broccoli and cook till done.
In a large bowl mix: ¼ cup olive oil, 1 tsp cumin, 1 tsp chili powder, 1 tsp dried or fresh (chopped) mint
Add to bowl 1 can (rinsed) chickpeas, stir to coat, then add vegetables and mix gently. ENJOY!

COLD
Prepare everything the same, but do not cook.
Mix all ingredients and serve. It will keep in the fridge for several days.

As I was writing this article, God told me He wants us to be like this too, either cold or hot; to be either FOR him or AGAINST him. It’s a choice, and like all choices, it has consequences, so be honest, as God knows what’s in our hearts.

Scripture:
Rev 3:15 “I know your deeds, that you are neither cold nor hot. I wish you were either one or the other.” NIV

So…until next time…

Tip #7: Enjoy a variety of food; it’s healthier, and it’s more fun!

Deb photo bioMy 15 year food journey has caused my taste buds to come alive and to anticipate new foods. I have lost weight, corrected health issues, and I’ve learned how important diet really is. Reading everything I could get my hands on truly opened my eyes to the evils of the food industry and how it is making us overweight and sick. I am in my 50’s and I am healthy, I take no medication, and I look more than 10 years younger than I am (so everyone says). The healthier we are now, the healthier we’ll be in our later years.

I came to be vegan one step at a time by gradually eliminating foods. Starting with; sea food, then meat, foul and fish, then eggs and dairy, all the while cutting out most processed foods, and totally eliminating pop. Then I went mostly raw, learned about juicing and smoothies, cut out most sugars, and I am now gluten free.

What’s left you ask? Mmmm….. I saved the best for last: lots and lots of vegetables with sides of legumes and grains, nuts and seeds, and fruit. I never go hungry.
There are many people living healthy vegan lifestyles today and they have created ways of making healthy alternatives for just about any food you could want.

Have fun!
